Beltana Farm Restaurant

Beltana Farm is located in a regional area of the Nation’s Capital near the airport. The project is part of a larger vision for the site and area to create a destination in Canberra to showcase local produce and experiences. Beltana Farm Restaurant was an evolving project which landed on the completion of a fine dining restaurant located within the truffle orchard in Pialligo.

Beltana Farm Restaurant was a dynamic project which undertook many variations to the brief. At the inspection the brief was to design a space that was to be flexible as a learning space for regional produce cooking classes with many cooking stations, with community interest growing the brief was developed into a flexible function space for both training and conferences.

Material selection within the design utalised the orange and pink Pialligo Sandstone located on the farm as the central fireplace which extended beyond the interior. A large bar was designed at the end of the space in complimentary marble to ground the joinery into the polished concrete floors. Rich timbers encased the steel structure to add warm to hard surfaces. Furniture selections where also to be flexible to allow for variety of functions from training, cocktail, product launches and full dining setup.

The back of house, brief was one of functionality and flexibility for the varied possible used. The commercial kitchen was required to be accessible for waiting staff, caterers, cooks and chefs, not take too much space and enable a varied selection of cooking techniques. Once construction had commenced interest from a locally renowned chef who became a stakeholder pivoted the brief to a fine dining restaurant to be a showcase for the truffle farm.
